With their limestone and clay soil, the region of Yverdon-les-Bains and the northern part of Canton of Vaud are a true truffle paradise! All the varieties prized by gourmets can be found here: from the summer truffle to the Muscat truffle, via the white truffle.
EXTRACTion
The hunt of truffles takes place between June and March, depending on the species. Today, hunters mainly look for truffles with the help of a dog. Thanks to their refined sense of smell, dogs are able to detect perfectly ripe truffles and report them to their owners without damaging them.
TASTING
Truffles enhance sauces, creams and mayonnaises and can be enjoyed throughout the meal. As an aperitif, truffles can be tasted in a fresh butter spread on a slice of toast. Accompanied by a glass of Chasselas white wine, it is a real delight! As a main course, truffles go perfectly with risotto, fresh pasta or fish. It can even be enjoyed as a dessert, with a fruit salad or an ice cream!
