INGREDIENTS Sponge Cake
- 4 eggs
- 125g flour
- 125g sugar
- A pinch of salt
PREPARATION
- Separate the egg yolks from the whites. Beat the sugar with the yolks until the mixture turns pale and creamy.
- Whisk the egg whites with a pinch of salt until stiff peaks form.
- Gradually fold the flour into the yolk mixture, then gently incorporate the egg whites.
- Pour the batter onto a baking tray lined with parchment paper and bake at 180°C (350°F) for 10 minutes.
INGREDIENTS Ganache
- 200g Ragusa chocolate
- 20cl heavy cream
- 50g butter
PREPARATION
- In a bowl, chop the chocolate into small pieces, then add the warm cream and butter, and whisk until smooth.
- Unmold the sponge cake and spread the ganache evenly over it.
- Roll the cake tightly into a log and wrap it in cling film, securing it firmly.
- Let it rest for 1 hour. Spread the remaining ganache over the outside of the log.
- Finally, decorate the log as desired.
