Recipe: Christmas log

Christmas log
Indulge in the Ragusa Camille Bloch Christmas log, a delicious dessert for your festive meals.

INGREDIENTS Sponge Cake

  • 4 eggs
  • 125g flour
  • 125g sugar
  • A pinch of salt
 

PREPARATION

  1. Separate the egg yolks from the whites. Beat the sugar with the yolks until the mixture turns pale and creamy.
  2. Whisk the egg whites with a pinch of salt until stiff peaks form.
  3. Gradually fold the flour into the yolk mixture, then gently incorporate the egg whites.
  4. Pour the batter onto a baking tray lined with parchment paper and bake at 180°C (350°F) for 10 minutes.
 

INGREDIENTS Ganache

  • 200g Ragusa chocolate
  • 20cl heavy cream
  • 50g butter
 

PREPARATION

  1. In a bowl, chop the chocolate into small pieces, then add the warm cream and butter, and whisk until smooth.
  2. Unmold the sponge cake and spread the ganache evenly over it.
  3. Roll the cake tightly into a log and wrap it in cling film, securing it firmly.
  4. Let it rest for 1 hour. Spread the remaining ganache over the outside of the log.
  5. Finally, decorate the log as desired.
