Toétché
Discover the recipe for Toétché, the traditional Jura sour cream tart.
 

INGREDIENTS tart dough Ø 28-30 cm

  • 300g Flour
  • 1/2 tsp Salt
  • 20g Soft butter
  • 2tbsp Rapeseed oil
  • 2dl Milk
  • 10g Crumbled yeast
 

Filling Ingredients

  • 2dl Sour cream
  • 0.5dl cream
  • 1 beaten egg
  • ¼ tsp salt
 

PREPARATION

  1. Mix the flour and salt, then make a well in the center. Add the butter and oil.
  2. Dissolve the yeast in the milk, pour into the well, and knead until smooth dough forms.
  3. Cover and let rise at room temperature until it doubles in size.
  4. Preheat the oven to 230°C (fan-assisted).
  5. Roll out the dough and place it on the prepared baking sheet, shaping the edges with your fingers.
  6. Let rise for another 15 minutes.
  7. Prick the base with a fork.
  8. Mix all the filling ingredients and pour over the dough.
  9. Bake on the lower rack of the preheated oven for 10-15 minutes.
