Recipe: gratinated Asparagus with Tête de Moine
Discover an easy spring recipe, perfect for enjoying regional asparagus with delicious Tête de Moine rosettes.
INGREDIENTS
- 1 Tbsp of butter
- 1 kg of green asparagus
- 3 eggs
- 2.5 dl of cream
- A bit of lovage (Maggi plant)
- 10 Tête de Moine rosettes
- A bit of salt & pepper
- A pinch of sliced almonds
PREPARATION
- Cook the asparagus in salted water for 1-2 minutes.
- Spread them in a buttered dish.
- Beat the eggs, cream, lovage, salt, and pepper, and pour the mixture over the asparagus.
- Arrange the Tête de Moine rosettes evenly.
- Bake in the middle of the oven at 180°C for 15 minutes.
- Sprinkle some sliced almonds on top.
