Recipe: gratinated Asparagus with Tête de Moine

Asparagus with Tête de Moine gratin
Discover an easy spring recipe, perfect for enjoying regional asparagus with delicious Tête de Moine rosettes.

INGREDIENTS

  • 1 Tbsp of butter
  • 1 kg of green asparagus
  • 3 eggs
  • 2.5 dl of cream
  • A bit of lovage (Maggi plant)
  • 10 Tête de Moine rosettes
  • A bit of salt & pepper
  • A pinch of sliced almonds

PREPARATION

  1. Cook the asparagus in salted water for 1-2 minutes.
  2. Spread them in a buttered dish.
  3. Beat the eggs, cream, lovage, salt, and pepper, and pour the mixture over the asparagus.
  4. Arrange the Tête de Moine rosettes evenly.
  5. Bake in the middle of the oven at 180°C for 15 minutes.
  6. Sprinkle some sliced almonds on top.
