Recipe: Lake Biel wine soup
Discover our delicious Lake Biel wine soup, an authentic recipe that will tickle your taste buds with its unique regional flavours.
Ingredients
- 1 tbsp butter
- 1 pressed garlic clove
- thyme
- 3 sprigs rosemary
- 3 dl Lake Biel white wine (e.g. Chasselas)
- 6 dl vegetable stock
- 2 fresh eggs
- 1.5 dl cream
- A sprinkling of chives to garnish
- salt and pepper
PREPARATION
- Melt the butter in a pan.
- Add the garlic, thyme and rosemary, deglaze with the Lake Biel wine and add the stock.
- Bring everything to the boil, reduce the heat and simmer for 5 minutes, then drain through a sieve.
- Beat the eggs and cream in a bowl until well combined.
- Add about 1 dl of the hot soup, stirring constantly.
- Slowly pour the egg/soup mixture back into the saucepan, while stirring continuously.
- Heat the soup, but do not allow it to boil.
- Season with salt and pepper, lightly whisk to emulsify, serve the soup and garnish with chives.
